Ana is a baker in Porto. Her working day starts at three o'clock in the morning, when the city is still dark and quiet.
She always begins with the bread. The dough rests for hours, so she cannot hurry. While the bread is in the oven, she prepares the little cakes with egg cream that people eat for breakfast.
At six the door opens. The first customers are usually taxi drivers and nurses on their way home from the night shift. They are tired and they do not talk much.
Ana finishes at two in the afternoon. Then she goes home and sleeps.
'People think my job is romantic,' she says. 'It is not romantic. It is flour, heat and hours. But I like it: my city has breakfast because I am awake.'
